STYLE BY RED TEST KITCHEN: SPINACH & EGGS

Ok, I know I told you I was gonna start my Style by Red test kitchen posts with the fried chicken and jalapeño coleslaw sandwich/burger recipe but something came up first.

This morning when I woke up I had totally different plans. First I wanted to go to the beach and then I was supposed to have brunch with my friends but I had to cancel everything and go on a different direction. Reason is I'm going to Guatemala tomorrow and I needed to get a lot of things done.  Since I wasn't gonna be having any brunch or mimosas with my friends anymore I decided to cook something yummy for myself. Here's my own healthy, yummy, easy to cook, home made brunch.

STYLE BY RED TEST KITCHEN

When I just moved here three months ago I bought this issue of Bon Appétit because...Well...It got me at hello with that photo obviously and because I wanted to start cooking yummy things. I've always dreamed of having my own kitchen, one that I don't have to share with other messy people. After the first trip to the supermarket my chef dreams where instantly frustrated, first because I totally get anxious in supermarkets (sooooo many options), and second because there was no way I could eat all those fruits and vegetables that I had just bought, after a couple of days everything had gone bad and my money down the drain (Whole Foods hellooooo). Needless to say I stopped buying all sorts of colorful and beautiful eggplants, broccolini, zucchini, etc... Howeeeeeveeeeer now that I've re-started Style by Red I've decided to put my chef dreams in full motor running again. I'm calling my new epicurean segment "Style by Red Test Kitchen." I was inspired by my fabulous friend and vintage maven Pamela Castillo (check out her online vintage marketplace Market Publique) who is always cooking the yummiest things and posting photos of her epicurean creations on Instagram. I tell her she needs to do something about her culinary passion, open a bistro, write a book, start a blog, something! She rocks! You guys have to stick around to see this because I'm super excited about my new culinary adventure. My first kitchen stunt is going to be this fried chicken and jalapeño coleslaw sandwich with spicy mayo. I'm gonna have to invite friends over for brunch because otherwise there's going to be a lot of food waste and we don't want that. Anyways food is supposed to be shared with the people you love, food is supposed to bring people together.

Stick around to see what happens my friends!!!

ANTIGUA DAY 4

Can you believe I've been in Antigua for 5 days and still I haven't been able to eat my vegetarian hamburger from La Esquina. Odds are I wont be having it today either because we're planing to go to "La Reunión" a beautiful golf resort about 30 minutes away from Antigua, food there is amazing as well as the view http://www.lareunion.com.gt/. I guess I can always come back to Antigua any other weekend and enjoy my wonderful vegetarian hamburger. Oh well, next time.

Yesterday was a wonderful day.

1. I took Taco and MJ for a walk in the park.
2. My mom and I had a wonderful italian lunch at El Cazador Italiano which translates into The Italian Hunter.
3. We went for a walk and had an exotic ice cream from Sobremesa.
4. We met with my friend Marianna and sat down on a bench in the park while I enjoyed a double espresso.
5. We went to dinner at Epicure.
6. I met with some friends and went out for drinks.

At Sobremesa having an exotic ice cream.

ANTIGUA DAY 3: FOOD

Oh my goodness everyone!!! If day 2 was characterized by endless walking, day 3 was characterized by endless eating!!! My mother and my aunt are both Spanish and I'm half Italian-half Spanish so of course we have good appetites!!!

When we left our house yesterday around noon we walked all the way to Casa Santo Domingo, one of Antigua's most prestigious and biggest hotels www.casasantodomingo.com.gt. There we had some drinks and some bruschettini, of course my mother doesn't drink so she had a lemonade, my aunt Victoria had a gin and tonic and I had a dirty martini.  We wondered around the hotel like a bunch of tourists for a while and when we finally left it looked like it was going to rain so we decided to head ourselves directly to Epicure. Epicure is one of my favorite restaurants and deli in Antigua, they serve and sell the freshest organic food and produce in Guatemala, If you order fish odds are it was caught that same day!!! It's without a doubt an incredible culinary experience, the food is nothing out of the ordinary but it tastes amazing.

3 hours later and 3 very full very happy stomachs we decide it was time to move, so we did. We kept on walking for a while and then it really started to rain!!! we speed walked to Panza Verde (another super nice boutique hotel in Antigua near our house) and decided to have a capuccino while the rain passed.

We finally got home, a bit tired and with a very full stomach still but extremely happy after such an enjoyable day. Let's see what tomorrow has in store for us!!! Hopefully more good times and more good food.

Lazy Taco.

Vigilant Taco.

I think my mother's photography skills are getting a little better. I guess I just need to have a little more patience.

OUTFIT

MAXI DRESS: From a local store here in Guatemala
OWL NECKLACE: Anthropologie
SANDALS: Massimo Dutti (after this vacation I'm gonna have to throw them out)

My moms lunch.

My aunts lunch.

Ladies and gentlemen...my lunch FRIED FISH!!! Fried, fried, fried hahahaha (don't be alarmed, I didn't eat the french fries, it was way too much to handle).

Look at that fish!!! Crispy and flaky and soft and tender, simply FANTASTIC!!! Fried fish is one of my faaaaaavorite dishes but only if cooked well and it can't smell like American fried food, otherwise I won't eat it.  Also don't even get me started with the delicious dried fruit and nuts bread they served us DELICIOUS!!!

If you are in Antigua and don't really know where to eat, I highly recommend EPICURE.

DOGGY CUPCAKES

I know this has absolutely nothing to do with fashion (or maybe it does, who knows?) but can you believe this doggy cupcakes? they where actually bigger in real life. Yesterday I had to attend a baby shower in the morning and they served us this cupcakes which I thought they where the most peculiar and most gigantic cupcakes I've ever seen. I didn't have the courage to eat one but my mom did and she ended up with her lips, teeth and mouth in some shade of blue hahaha but she did admit that they where delicious.

Oh by the way there's one breed of dog missing in the picture. The biggest of all cupcakes where this Pomeranian style ones hahahaha HUGE I'm telling you.
